Quinoa ~ One of my favourite superfoods

Looking good and feeling good has a lot to do with our food intake, lifestyle, and in many instances, our attitude to issues around us, issues that have an impact on our moods and general perception of life.

I have always had a crazy consciousness of how I look, my appearance. Although I am not much of a gym-buddy, perhaps once a week, I however care about the stuff I eat.

I believe what you put inside plays a massive part of how you look on the outside.

Couple of years ago, I was in a 7-day diet challenge with a few girlfriends. I had tried loads of grains in the past but somehow had missed out on Quinoa.

I googled one morning, grains for health, and found Quinoa.

I have since made this a part of my regular diet and boy!!, does it have a super punch!!!

Here’s one way I enjoy my Quinoa

Quinoa Tips

First, I wash the Quinoa under cold running water and let it drain completely.This is just to remove some of its bitterness.

(I have however cooked without washing in the past but made sure I fried the Quinoa lightly in olive oil for 2-3minutes before cooking).

I then lightly fry the Quinoa in some extra Virgin Oil with chopped garlic for 3mins.

Next I pour in about 3 – 4 glasses of water, about an inch over the Quinoa level.

I add Oregano, Thyme (or whatever pleases your palate), some pinch of salt and simmer in medium heat for 20 – 25mins.

I served this dish with oven-roasted Vine Tomatoes, Broccoli, fresh dill, baked lime-bathed cod fish and fresh Parsley.

You could have your Quinoa anyhow that suits you, but I really did enjoy this meal loads 😉😊!
